Po-Boys
Po-boy sandwiches were invented in New Orleans. This is a special kind of sandwich that can only truly be bought in our city, because to truly be a po-boy, it must be made on New Orleans French bread. There are only three bakeries left in New Orleans who make a true French bread - Gendusa's, Leidenheimer's, and Binder's. Many of the grocery stores make what they call French bread, but since the bread is not made in the old brick ovens, it’s not truly French Bread.
The name po-boy is short for “poor boy.” They were invented in the 1920’s. The original po-boys were made of a large piece of French bread, filled with gravy and French fries. It cost a nickel. So it was a perfect, filling meal for a “poor boy.”
