Filé
Filé is a powder that is used to thicken gumbo. It was introduced to early settlers in Louisiana by the Choctaw Indians. Filéis made from sassafras leaves. You cut the leaves off of the tree, let them dry out for several days, and grind them into a fine powder. You add the filé to gumbo when it is finished cooking, and it gives the gumbo a wonderful taste and makes it thick and hearty.
